Ayurvedic Rice Kanji Recipe for Detox & Panchakarma Cleansing

This classic Ayurvedic Kanji uses white rice, abundant water, and light digestive spices (cumin, ajwain, ginger) to create a thin, soothing porridge. It’s designed for ease of digestion, suitable for all doshas with simple tweaks, and ideal during Panchakarma or anytime digestion feels weak.

Ingredients

  • Basmati White rice – ½ cup (short‑grain or unpolished preferred)
  • Water – 6–7 cups
  • Cumin seeds – ½ tsp (lightly crushed)
  • Ajwain (carom) – ½ tsp (optional, great for detox)
  • Fresh ginger – ½ inch, finely grated
  • Black/rock salt – to taste
  • Ghee – ½–1 tsp (optional; good for Vata & preparation phase)
  • Fresh coriander – a few sprigs (optional garnish)
Soak tip: Rinse and soak rice 15–20 minutes to speed up cooking and improve digestibility.

Method

  1. Wash rice well and (optionally) soak 15–20 minutes. Drain.
  2. In a deep pot, combine rice with 6–7 cups water. Bring to a boil over medium heat, uncovered.
  3. Simmer gently, stirring occasionally, until grains break down and the texture is a smooth, soupy porridge (about 30–40 minutes).
  4. 10–15 minutes before finishing, add crushed cumin, ajwain, and grated ginger. Continue to simmer.
  5. When the rice is nearly dissolved and broth looks creamy, season with black/rock salt to taste.
  6. Optionally stir in a little ghee (especially for Vata or during snehana/prep days). Garnish with coriander and serve warm.

Ayurvedic Adjustments

  • Vata – Add 1 tsp ghee, make slightly thicker for grounding.
  • Pitta – Use less ginger, moderate salt, plenty of coriander.
  • Kapha – Keep it thin (more water), use extra ginger & spices.

  • During Panchakarma detox as a light meal.
  • When digestion is sluggish, after overindulgence, or during illness recovery.
  • As a gentle evening supper for better overnight digestion.
